POTSDAM -- The Potsdam Food Co-op, 24 Elm St., will host their “Say Cheese Please! Food Sampling” Thursday, Dec. 10, from 3:30 until 5:30 p.m.
The highlighted cheese is gruyere, a hard yellow cheese made from cow's milk.
It is named after Gruyères, Switzerland where the cheese has been produced since 1115, the co-op said.
It often has a rusty brown rind and is sweet and slightly salty.
It has a flavor that is creamy and nutty when young, and more earthy and complex when fully mature at five to 12 months.
