Smoking and barbecuing class Oct. 11 to honor late Canton community member Reggie Sapp

CANTON — Cornell Cooperative Extension of St. Lawrence County’s Ag and Food Systems department is partnering with local food entrepreneur Mike Morgan to host a class on smoking and barbecuing meat in honor of the late community member, Reggie Sapp. The second annual event will be held Oct. 11 at Cooperative Extension in Canton.

Sapp, a former board member of Cooperative Extension, was a proud supporter of agriculture, a restaurant owner, and a passionate cook, especially known for his love of barbecue and smoked meats. To honor his legacy, last year’s inaugural memorial workshop filled quickly and offered participants cooking techniques, a hands-on demonstration, and a lunch of smoked meats and sides prepared by Mike and Lisa Morgan of Morgan’s Munchies and Catering. Attendees also took home locally produced meat from Tucker’s Black Angus Ranch after learning to break it down during class.

This year’s workshop will offer a similar experience. Participants will once again receive expert instruction, enjoy a smoked lunch, and learn to trim a pork shoulder, which they will take home. The pork is being provided by 8 O’Clock Ranch.

Organizers say the goal of the workshop is to celebrate Sapp’s legacy while connecting community members to his passions for agriculture and cooking through hands-on education and local food sourcing.

Registration is available at stlawrence.cce.cornell.edu under the events page. The cost to attend is on a sliding scale from $70 to $120. The class will take place in the Harvest Kitchen, a rentable commercial-use space at Cornell Cooperative Extension, 2043B State Highway 68, Canton.
