Cooking classes offered at Extension's Harvest Kitchen in Canton

CANTON -- While the snow is settling in the North Country, there are still great opportunities for preparing meals with locally sourced ingredients.

Cornell Cooperative Extension is eager to share skills about seasonal eating along with techniques to build confidence in the kitchen, said an extension press release.

Through 2021, Extension will be a one-stop shop for kitchen inspiration.

Check out the collection of cooking classes during the Extension’s Celebrating Local Food: A Culinary Series at the Harvest Kitchen at the Extension Learning Farm, 2043 State Highway 68.

The first class series is Big Spoon at the Harvest Kitchen: Savory Essentials. The cooks of Big Spoon Kitchen are passionate about farm-to-table dining and creating memorable, simple meals all year long, the press release said.

Each class features a different instructor from Big Spoon Kitchen along with one of their favorite cooking techniques. Every class is held on a Thursday from 6-8 p.m. and includes making and sampling the evenings dishes along with recipes to take home

Participants can sign up for one or more of the following classes:

• Building Flavor with a French Classic: Cassoulet with Jesse Diamond-Brown on Dec. 12.

• House Made Chips with Flavorful Dips with Steve Greco on Dec. 19.

• Making Pasta with a Hand Crank Machine with Josh Taillon on Jan. 9.

• Will Trithart will be instructing Round and Yummy: Vegetable and Meatballs on Jan. 16.

• Rose Rivezzi will share Mastering the Flaky Pie Crust on Jan. 23.

Ingredients for the first workshop will be sourced from Kent Family Growers of Lisbon, Martin’s Farmstand of Potsdam, littleGrasse Foodworks of Canton and Pat and April’s Pork of Fort Covington.

The class sizes are limited so that all attendees can participate; pre-registration is required.
