POTSDAM -- The Potsdam Planning and Development Office is conducting a survey as part of its efforts to determine feasibility of a Community Kitchen/Food Incubator in Potsdam.
A Community Kitchen is an institutional-grade facility fully certified and inspected by local health officials. It would be a fully stocked kitchen available to the public for a variety of uses.
The goal is to encourage and assist value-added agriculture, farm sales and agri-food businesses, planning officials say. Increasing the consumption of locally grown food and assisting entrepreneurs with their food-related businesses are two key priorities.
To determine if a certified Community Kitchen/Food Incubator would help achieve those goals, the planning office is surveying farmers, food producers, churches and civic groups, caterers, restaurant owners and local gardeners.
The survey attempts to assess what type of food items would be prepared in the community kitchen, what facilities are currently being used, type of equipment needed, how often the food incubator would be used and at what time of day, what type of customers are being targeted and expected employment impact.
