POTSDAM -- An experienced baker and restaurateur from Connecticut hopes to have her new business, Marigold’s Kitchen and Bakery, open on Market Street in September.

Gail Anderson says the business will be at 19 Market St., the former Wear on Earth store.

“All the permits are in place,” and now she’s concentrating on renovating the space, she said.

For baked goods, she will offer cakes to order or by the slice in the store, a “cookie island” with five kinds of cookies a day, selling them individually and in bulk, and an assortment of other baked offerings such as brioche, hot corn bread, pitas and croissants.

Marigold’s will be open Tuesday through Friday 10 a.m. to 7 p.m. with a “mix and match a la carte” menu with items such as vegetarian lasagna, crab cakes, quiches, pulled pork and other entrees with vegetable side dishes, and homemade soups.

Along with her regular fare, she will also be serving breakfast on Saturdays and Sundays, open 9 a.m. to 2 p.m. both days.

She says she will offer “healthy local meats, all as local as we can get. I try to accommodate different diets,” and different needs from customers such as something quick to grab and go for lunch, or dinner orders she will be able to take online for delivery or pickup. Or people may choose to sit down right there, but Anderson says she hasn’t made a firm decision yet about how many seats who will have.

Anderson says she will be there full time, and she plans on hiring a part-time baker and part-time counter people.

She and her husband decided to come to Potsdam after spending time at a family camp at Star Lake and discovering a desire to spend more time there, so they came here for business within reach of the camp.

“I love the schools here, I love the village. It’s a great place,” she said.
