POTSDAM -- The Potsdam Food Co-op's third Thursday Sampling will be held Jan. 18, from 3:30-5:30 p.m. Featured will be Injera with two sauces from Jemila Saleh's Kitchen of Potsdam.
Injera is a sourdough-risen flatbread made with gluten-free teff flour.
It has a unique and slightly spongy texture and is a national dish of Eritrea and Ethiopia, located in East Africa.
Jemila will serve her Injera with Shiro, a chickpea sauce, as well as a Cabbage Sauce.
Jemila immigrated to Potsdam as a refugee from Eritrea in 2008 with her three daughters.
She has been sharing Injera with its delicious sauces ever since.
