Highlighted will be their April Cheese of the Month; Jersey Girly Colby, a regionally produced cheese from a small farm in New York state.
Jersey Girl Colby is a raw milk cheese made with the milk of Jersey cows from the Autumn Valley Farm in Worcester.
Aged in cave rooms at the Cooperstown Cheese Company, it has a creamy texture and a mild, yet lingering taste.
