POTSDAM -- The Potsdam Food Co-op, 24 Elm St., will host Juanita’s First Thursday Creations on May 5 from 3:30 to 5:30 p.m. featuring one-pot Mexican freekeh, a vegan dish featuring an ancient Middle Eastern grain discovered by accident.
After an area was attacked and the green wheat burned, the resourceful villagers rubbed the chaff and cooked it anyway, giving birth to delicious roasted Freekeh.
The grain is rich in protein, fiber, manganese, and other nutrients, and contains no salt or cholesterol.
