POTSDAM – A new Asian noodle shop will be opening in Potsdam, perhaps as soon as February.
Owner Eddie Soikum, owner of the Thai Cuisine Restaurant at 29 Maple Street, says the new eatery, to be called The Noodle House Restaurant, will be in what was The Hop at 3 Market Street.
“I ordered all the equipment, but I don’t know when it will come,” Soikum said, but he believes if it arrives promptly and he gets all the appropriate approvals from the Health Department and other authorities in good time, people could be sampling the variety of noodle soups and salads he plans to serve – “all kinds,” he says -- in little more than a month.
He expects to have three people on duty at a time, two cooks and one waitstaff/cashier, “and if it gets busy, more people.”
Soikum plans on a good takeout business, and he believes there will be seating for 15 or 20 people.
The hours he plans to have the Noodle House open aren’t definitely set yet, but he plans on catching lunch and dinner customers, probably between 11 a.m. and 8 p.m.
Soikum and his wife opened the Thai Cuisine Restaurant only last summer. He and family members have another restaurant in Mendon, Vt., The Thai Star.
